Chinese is the world's largest language by speakers. Simplified vs traditional script matters: simplified for the mainland, traditional for Taiwan and Hong Kong.

Punch and Ribbon put a backing behind the text, so they stay readable over busy footage. Clean and Mini take up less space and suit simple shots. Neon and Contrast read best on small screens but dominate the picture. Watching the clip at phone size is all it takes to decide.
When you pick the language, the engine transcribes for it. If the recording truly mixes two languages, choose the dominant one for the cleanest result.
